For the Marinade
- ½ cup olive oil
- ¼ cup soy sauce
- 2 tablespoons freshly squeezed lemon juice
- 3 garlic cloves finely minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- 1 teaspoon honey or maple syrup optional for sweetness
For the Skewers
- 2 pounds chicken breasts or thighs cut into bite-sized cubes
- 2 bell peppers red, yellow, or green, chopped
- 1 large onion sliced into wedges
- 1 cup cherry tomatoes
- 1 cup pineapple chunks optional for a sweet twist
Optional Garnishes
- Fresh parsley or cilantro
- Lemon wedges
. Prepare the Marinade
In a mixing bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, oregano, black pepper, and honey or maple syrup.
Whisk until smooth and well-blended.
Marinate the Chicken
Place chicken cubes in a resealable bag or airtight container.
Drizzle marinade over the chicken and toss gently to coat evenly.
Seal and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor. If camping, keep in a cooler.
Prep the Vegetables
Cut bell peppers, onion, and other vegetables into uniform pieces for even cooking.
Slice pineapple chunks if using.
Soak Wooden Skewers (If Using)
Assemble the Skewers
Thread marinated chicken, vegetables, and pineapple chunks onto skewers, alternating ingredients.
Leave small gaps between pieces to allow even heat distribution.
Grill the Skewers
Preheat your grill or campfire grate:
Charcoal: Wait for coals to turn ashy white.
Gas: Set to medium-high heat.
Campfire: Ensure flames have subsided to glowing embers.
Place skewers on the grill and cook for 10–15 minutes, turning every 3–4 minutes.
Check for doneness using a meat thermometer (165°F or 74°C).
