Marinated Grilled Chicken Skewers

Tender marinated chicken paired with vibrant vegetables and grilled to smoky perfection, these skewers are an easy, flavorful camping favorite.

Equipment

  • Resealable bags or airtight containers for marinating
  • Skewers (metal or soaked wooden)
  • Portable grill, camp stove, or campfire with a grill grate
  • Tongs for safe handling
  • Cutting board and knife for ingredient prep
  • Meat thermometer to ensure safe cooking

Ingredients
  

For the Marinade

  • ½ cup olive oil
  • ¼ cup soy sauce
  • 2 tablespoons freshly squeezed lemon juice
  • 3 garlic cloves finely minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon honey or maple syrup optional for sweetness

For the Skewers

  • 2 pounds chicken breasts or thighs cut into bite-sized cubes
  • 2 bell peppers red, yellow, or green, chopped
  • 1 large onion sliced into wedges
  • 1 cup cherry tomatoes
  • 1 cup pineapple chunks optional for a sweet twist

Optional Garnishes

  • Fresh parsley or cilantro
  • Lemon wedges

Instructions
 

. Prepare the Marinade

  • In a mixing bowl, combine olive oil, soy sauce, lemon juice, garlic, paprika, oregano, black pepper, and honey or maple syrup.
  • Whisk until smooth and well-blended.

Marinate the Chicken

  • Place chicken cubes in a resealable bag or airtight container.
  • Drizzle marinade over the chicken and toss gently to coat evenly.
  • Seal and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor. If camping, keep in a cooler.

Prep the Vegetables

  • Cut bell peppers, onion, and other vegetables into uniform pieces for even cooking.
  • Slice pineapple chunks if using.

Soak Wooden Skewers (If Using)

  • Submerge wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Assemble the Skewers

  • Thread marinated chicken, vegetables, and pineapple chunks onto skewers, alternating ingredients.
  • Leave small gaps between pieces to allow even heat distribution.

Grill the Skewers

  • Preheat your grill or campfire grate:
  • Charcoal: Wait for coals to turn ashy white.
  • Gas: Set to medium-high heat.
  • Campfire: Ensure flames have subsided to glowing embers.
  • Place skewers on the grill and cook for 10–15 minutes, turning every 3–4 minutes.
  • Check for doneness using a meat thermometer (165°F or 74°C).

Serve and Enjoy

  • Garnish skewers with fresh herbs and lemon wedges if desired.
  • Pair with sides like rice, salad, or grilled corn for a complete camping meal.
