Shrimp Boil Foil Packets are a flavorful, easy-to-make camping meal. Packed with shrimp, sausage, potatoes, and corn, they’re perfect for campfire, grill, or oven cooking with minimal cleanup.

Essential Ingredients

  • 1 lb large shrimp peeled and deveined (tails on for presentation)
  • 2 andouille sausages sliced into ½-inch rounds
  • 1 lb baby potatoes halved or quartered
  • 2 ears of corn cut into smaller pieces (or 4 frozen mini cobs, thawed)

Seasoning and Flavor

  • 3 tbsp Old Bay or Cajun seasoning
  • 4 tbsp butter melted (plus extra pats for topping)
  • 2 garlic cloves minced
  • 1 lemon sliced into rounds

Optional Add-Ons

  • Fresh herbs e.g., parsley or thyme
  • Diced jalapeños for heat
  • Zucchini or bell peppers for extra veggies

Instructions
 

Prepare the Ingredients

  • Parboil Potatoes: Boil baby potatoes in salted water for 10–15 minutes until fork-tender but not fully cooked. Drain and cool.
  • Prepare Corn: Remove husks and silk from fresh corn, slicing into 3–4 inch pieces. Thaw frozen cobs if using.
  • Clean Shrimp: Rinse under cold water and pat dry. Devein if necessary.
  • Slice Sausage: Cut smoked sausage into ½-inch rounds.

Assemble the Foil Packets

  • Tear Foil: Cut heavy-duty foil into 12–14 inch sheets (one per packet).
  • Combine Ingredients: In a mixing bowl, toss shrimp, sausage, potatoes, and corn with melted butter, seasoning, and minced garlic until evenly coated.
  • Fill Packets: Spoon a portion of the mixture into the center of each foil sheet. Add a pat of butter and a lemon slice on top.
  • Seal Packets: Fold foil tightly to create a steam-proof seal, folding the edges up and over.

Cook the Packets

  • Campfire: Place packets on a campfire grate over medium coals. Cook for 20–25 minutes, flipping halfway.
  • Grill: Preheat to medium heat (375–400°F). Cook packets for 20–25 minutes, flipping halfway.
  • Oven: Preheat oven to 400°F. Arrange packets on a baking sheet and bake for 20–25 minutes.

Serve and Enjoy

  • Carefully open packets (watch out for steam) and serve. Garnish with parsley and serve with lemon wedges.
  • Pair with crusty bread or a fresh salad for a complete meal.
