Prepare the Ingredients
Parboil Potatoes: Boil baby potatoes in salted water for 10–15 minutes until fork-tender but not fully cooked. Drain and cool.
Prepare Corn: Remove husks and silk from fresh corn, slicing into 3–4 inch pieces. Thaw frozen cobs if using.
Clean Shrimp: Rinse under cold water and pat dry. Devein if necessary.
Slice Sausage: Cut smoked sausage into ½-inch rounds.
Assemble the Foil Packets
Tear Foil: Cut heavy-duty foil into 12–14 inch sheets (one per packet).
Combine Ingredients: In a mixing bowl, toss shrimp, sausage, potatoes, and corn with melted butter, seasoning, and minced garlic until evenly coated.
Fill Packets: Spoon a portion of the mixture into the center of each foil sheet. Add a pat of butter and a lemon slice on top.
Seal Packets: Fold foil tightly to create a steam-proof seal, folding the edges up and over.
Cook the Packets
Campfire: Place packets on a campfire grate over medium coals. Cook for 20–25 minutes, flipping halfway.
Grill: Preheat to medium heat (375–400°F). Cook packets for 20–25 minutes, flipping halfway.
Oven: Preheat oven to 400°F. Arrange packets on a baking sheet and bake for 20–25 minutes.
